What’s for Dinner? #5

Kale lasagna from 365 Days of Kale It was yummy despite the water not absorbing well, I used 1/2 cup as suggested in the notes but I still had loose water after it cooked. I also made a non-vegan lasagna for hubby and the recipe has you add a cup of water to the sauce so maybe I will try that next time. Took a lot of prep work but this will be going in the freezer and will last us for awhile. I used white mushrooms since according to Dr. Greger they are the best at breast cancer prevention.


I love to learn, and I consider myself to be a very fluid person so I enjoy taking what I learn and allowing it to make a difference in my life. My latest transformation has been eating healthier and working out. I never thought that I would be reaching for fruit when I crave something sweet and that I would actually look forward to going to the gym.
