What’s for Breakfast? #6

Vegetable Bake from The Gluten Free Vegan. In place of the tofu I used a can of garbanzo beans and added extra water. I’m thinking about not eating tofu because I’ve heard that too much soy is bad and that tofu is man made so we shouldn’t eat it. I used garbanzo beans because another recipe I made listed that as a substitute. I have to say it has a very different taste, especially for breakfast.The bites with the mushroom in it are the best so I think I will use more mushrooms if I make it again and find a better substitute for the tofu.

What did you eat for breakfast?


I love to learn, and I consider myself to be a very fluid person so I enjoy taking what I learn and allowing it to make a difference in my life. My latest transformation has been eating healthier and working out. I never thought that I would be reaching for fruit when I crave something sweet and that I would actually look forward to going to the gym.

    This looks so good! I would have never thought to substitute beans for the tofu, but it makes it sound even better! I just had boring old oatmeal for breakfast, : /
