What’s for Snack? Cheesy Kale Chips

Here is another recipe from Vegan Junk Food and again I’ve made kale chips before but these are the best I’ve made. Usually I use extra virgin olive oil and just sea salt to season but I decided to get more adventurous with new seasonings and I used coconut oil this time. She calls for two tablespoons of oil but mine turned out just fine with one tablespoon and since I like to go easy on the salt I used half a teaspoon of sea salt instead of one. These only took 13 minutes to bake. I don’t usually like spicy food but the cayenne added just enough heat to compliment the cheesy taste.

What kind of chips do you eat in place of potato chips?


I love to learn, and I consider myself to be a very fluid person so I enjoy taking what I learn and allowing it to make a difference in my life. My latest transformation has been eating healthier and working out. I never thought that I would be reaching for fruit when I crave something sweet and that I would actually look forward to going to the gym.

  1. Hmm. This is one type of food I do not like. I’ve tried a couple varieties of kale chips and I just don’t like them. Maybe I’ll give them a whirl with this recipe.
