What’s for Snack? Copycat Lara Date Bars

I love LaraBar’s but at over a dollar a piece they are a splurge. Since they include so few ingredients I decided to venture making them on my own. I came across a few websites with recipes and I have made three flavors: peanut butter cookie, blueberry muffin, and cashew cookie. The DamyHealth website gives a lot of options of variations you can make. I started with peanut butter cookie because it’s my favorite flavor and it’s just two ingredients. I’ve made multiple batches experimenting with the blending process, I’ve put peanuts and the chopped dates in the food processor together to blend and another time I’ve processed them separately first then put them together. I like the texture best when I process them at the same time.

Here is the peanut butter flavor, when I processed the peanuts and dates separately in the food processor. So it came out with a less nutty texture.

This one is the blueberry muffin copycat, which is my second favorite flavor. After processing the ingredients separately I then hand mixed them together, formed them into bars then dipped them in the left over nuts.

I love to learn, and I consider myself to be a very fluid person so I enjoy taking what I learn and allowing it to make a difference in my life. My latest transformation has been eating healthier and working out. I never thought that I would be reaching for fruit when I crave something sweet and that I would actually look forward to going to the gym.
