What’s for Lunch? Tomato Soup

So I had some left over filling from the stuffed cabbage that we had for dinner so I made soup out of it and served it with a salad.

In the soup is rice, onion, celery, the carrot mixture, enough vegetable broth and water to cover and one cup of tomato puree and tomato sauce. Then I added more puree, broth, and water to make a soup consistency and juice from half a lemon which ended up being to much so then I added more tomato sauce to try to fix it. It wasn’t too bad but it wasn’t too good either, still working on my creativity in the kitchen.

The salad is cucumbers, grape tomatoes, spinach, and pumpkin seeds. (Not currently eating seeds, so this is an old post.)


I love to learn, and I consider myself to be a very fluid person so I enjoy taking what I learn and allowing it to make a difference in my life. My latest transformation has been eating healthier and working out. I never thought that I would be reaching for fruit when I crave something sweet and that I would actually look forward to going to the gym.
