What’s for Lunch? Butternut Squash Tostada

I got this recipe from Diners, Drive-ins, and Dives. You are free to use your preference for each ingredient but here is what I used. I cut squash into third’s, placed in water and brought it to a boil. Once boiling cooked for 2-3 minutes, then allowed to cool before removing the seeds and skin. In a skillet I added 1 tbs coconut oil, white onion, 1 yellow bell pepper, 1 heirloom and 1 regular tomato, and the recipe calls for jalapeno peppers but I didn’t include them. After allowing to cook for a few minutes I added the squash and continued to cook until soft. Then you can put the squash mixture on a tostada and top with tomatoes, onions, and cilantro. I’m not eating corn so I just plated the mixture. I enjoyed this but I would say I overcooked the tomatoes waiting for the squash to get really soft but I realized the squash should have a bit of crunch to it.

Diners, Drive-ins and Dives is a show I liked to watch before going vegan. I had hoped to get to travel to the restaurants to try the various food, but now I watch it to veganize the recipes. This recipe was vegan as is. Do you have any food/cooking shows you once enjoyed before switching your diet that you still watch? I will say some of the show is hard to watch so I just change the channel during those parts.
