I like chickpea salad and I have made a few variations of it. For this one I didn’t use a recipe I mostly threw together some items I had on hand: roughly two cups of chickpeas, half red onion, chopped garlic, two collard leaves massaged with a tad of extra virgin olive oil, and a green zebra tomato (which is my new favorite tomato). I sprinkled on some Chunky Chat Masala* to taste.
My daughter and I liked it.
*Update 8/19/12 MDH Chunky Chat Masala contains asafoetida which may contain wheat. I am tying to get a hold of the company to find out.
