Hello, I thought I would check in to give you all an update on what I’ve been doing since my smoothie feast.
I spent a day or two just eating fruits then I added vegetables and mushrooms. My goal is to only eat fruit, vegetables and fungus (mushrooms) for four more weeks or until I heal from the gluten damage, whichever comes first. I’m also including hemp seeds, fresh herbs and safe spices. Eight weeks is the maximum time I have heard that it should take for symptoms to go away so I have a little over four weeks left. In order to avoid cross contamination I wanted to only eat food I have prepared and avoid packaged food but I did have a kale salad from Peace Pies and some packaged items including the hemp hearts that I have confirmed come from a safe facility. Peace Pies is a gluten free restaurant but they do use nuts which I am avoiding cross contamination with along with dairy and corn because I can not digest them. I thought I would get bored with my restricted diet but I’m enjoying my meals and I have been trying new things.
Unfortunately I have lost more weight and I am considered underweight again. So I am going to increase how much I am eating and I am not exercising everyday or intensely. I also lost some more in my abdomen but it doesn’t stay at my smallest measurement.
I did some more online research and found out about a specialist called a gastroenterologist, my insurance will cover the cost so I have an appointment Wednesday. I really hope I’m able to get the help I need, so please send good thoughts, prayers, vibrations, or well wishes my way.
On another note I did mention my mom was coming to visit. Although I couldn’t partake in outside foods she did enjoy some vegan pizza, tried some new vegetables and was glad she got to try tofu even though she didn’t feel it was seasoned well. She also brought me some granola and kale chips from Matthew Kenney which I look forward to eating once I can digest nuts again.
