When I made the video describing what I eat, I thought that some people may think that it is boring. Due to buying local in season produce, I eat the same items for a few months. I also don’t use any spices, garlic or onion to season my food. In all honesty a few short months ago I would have considered the way I eat now to be boring too. But when I think about it I didn’t eat a wide variety of food when I was on the typical American diet. I pretty much ate pasta, burgers, and pizza, the only thing that varied about it, was what chef or company cooked the items. Currently even though I buy the same items every week at the farmer’s markets, I switch up how I use the ingredients and also how I add fresh herbs to them for extra flavor (ripe fruit is so flavorful on its own). For instance I still love Italian inspired dishes so with zucchini I can spiralize it to make spaghetti or cut long strips to make lasagna and there are many options for ingredients for the sauces. Eating low fat raw vegan has really made me creative in the kitchen so I am not bored at all.
