1/2 cup dried mulberries, 1/8 cup raw pistachios, 5 soaked small pitted dates (I used barhi and zahidi) . For strawberry filling just 2 large frozen then slightly thawed strawberries and four soft pitted dates (makes more than needed).
Process cookie ingredients in food processor until sticky then form in ball and press thumbprint. Refrigerate while you process filling. Pour filling in thumbprint and refrigerate to set. Makes 6.
I’ve been struggling with mono meals so it’s encouraged me to get creative in the kitchen. Low fat raw vegan can be as simple or complex as you want but even the complex end of it isn’t really that complicated or time consuming. This was just four ingredients, didn’t require a mixer or any baking time. I love how easy it is to be raw!
