What’s for Dessert? Carrot Cake Cupcakes

My daughter turned 2 yesterday so we celebrated with cupcakes from The Happy Herbivore. I only had one cup of applesauce but they still turned out good. I used organic powdered sugar/evaporated cane juice for the frosting.
